Hand-harvested grapes are naturally fermented in large open-top barrels with 10% whole bunch included. After a gentle press the wine rests in old oak for 14 months before bottling. This wine is made in miniscule quantities – just 54 18kg boxes of grapes were picked, all in one March morning. The vineyard itself – known as Jacob’s Ladder for its steep slopes- is on the Karibib Farm in the Polkadraai Hills Ward just outside Stellenbosch. The area is well known for its decomposed granite soils which are perfect for Syrah – just as they are in the Northern Rhone.
