Biancardi, Mille Ceppi, Amphora Nero di Troia, Puglia, 2021
Amphorae have a long history in Puglian wine making, but this is a new project for Michele. 100% Nero di Troia, the grapes are dried for two weeks in the appassimento style to concentrate the flavours. This is followed by a two week fermentation in stainless steel tanks before a year in the terracotta amphorae. Broad and rounded there is a slightly creamy edge to the fruit, floral notes and hints of flinty minerality. Sappy and energetic, it is a fantastically different expression of the grape and – thankfully – not too ‘natural’.
