Red Recioto della Valpolicella is made after careful late picking of ripe bunches (of Corvina and Rondinella grapes), which are then left to desiccate in the autumn, thereby concentrating body and sweetness. Very concentrated, beautifully jellied fruit. Morello cherries, strawberries and raspberries. Wonderful stuff, equally at home with strong hard cheese as with not-too-sweet chocolate puddings.
