Les Gryphées refers to the fossils of ancient oysters found in the vineyards, and this was our pick of over the 300 wines we tasted at Wine Paris back in February. A tiny production single vineyard Chardonnay made in a conventional Burgundian style. It has weight, structure, fruit and minerality perfectly in harmony with spiced apple fruit and just a hint of crème fraiche from the one-third aged in new oak.
