Gareth tasted dozens of sparkling wines on his trip to the Cape in September 2025 and very few could match the brilliance of the Domaine des Dieux wines. This (very, very) pale rosé is named after the biblical story of Solomon, who compared his love to the blossoming of the Rose of Sharon.
It is made from 78% Pinot Noir and 22% Chardonnay, given eight years ageing on the lees before release. Very pale partridge eye hue. There’s gentle red fruit, but it’s otherwise refined, dry and savoury. Very delicate mousse. Would be lovely to drink with poached salmon. Now-2026
