Roche aux Moines is one of the top vineyards in Savennieres producing wines with an intense flavour and character. This example from Domaine de Forges is no exception. This is hand harvested and barrel fermented. It is then aged in oak for 11 months with regular lees stirring. The result is an incredibly satisfying and complex white wine. The nose is bursting with seville orange, baked apple and a little pudding spice. This maintains on the palate with some honeyed notes a fine vein of minerality running through it. Completely gastronomic and beguilling. They recommend decanting before serving. I would not disagree. Now - 2029
