All de-stemmed with no crushing. Some batches given 4-5 days cold soak. Some pigéage and pumping over to aid extraction. Then into 30% new, 30% one year old and the rest in older barrels. Good bright colour. Perfumed with cherries and a hint of exotic spice from the oak. Gorgeously fruited, all cherries and brambly fruit. Pure and elegant, with substance and backing for keeping. Long, with an attractive savoury note on the finish. Now-2031
