“Lemon and thyme on the nose and whistling with intensity on the palate. Acidity vibrating like harp strings. Acacia blossom, Amalfi lemon, wonderfully fragrant herbs and then something a little buttery but lightly bitter, like cold salted butter flecked with lemon zest. Distinct character. Named after a village priest who was said to have introduced the wine of Cabrières to the court of Louis XIV, this is 100% old vine Clairette of the highest order.  Aged in concrete tanks, it shows a surprising depth of flavour. White flowers, garrigue and apple greet you, with a slight honeyed note on the palate too. Long finish - a very satisfying wine. Now-2025
