The top white at Fiorano, from Pecorino picked late for full ripeness and fermented using indigenous yeasts in French barrels. Half of the malolactic fermentation is blocked to preserve freshness; and it's then given eight months in oak on the lees. Splendidly intense aromas of honey and lime. Beautifully integrated oak on a wine with depth, a little spice and great follow-through. Do try this as an alternative to barrel-fermented, fine white Burgundy: of course it's different but it comes with the same virtues of concentration, subtle oak and structure.

All exhibit an entrancing purity of fruit, and all are bottled with minimal sulphur levels.
Paolo and Paola bought the farm in 1991, and consider their grass-covered vineyards, a beautiful amphitheatre, lie in a special spot: about 250-350 metres up on the eastern side of the Apennines, about 15 kms. from the Adriatic, surrounded by their own olive groves, on a mix of clay, limestone and sand.
