Clotilde Davenne, Bourgogne Aligote, 2025
Aligoté is the ‘other’ white grape in Burgundy. In the wrong hands it is best used in a Kir, but top growers like Davenne produce outstanding wines from it, especially in warmer vintages such as 2025. Vibrant and energetic it has very impressive weight of fruit on the palate: ripe confit lemon and quince with saline crushed oyster shell notes alongside. Oysters would be a classic match but it makes a fine partner for smoked salmon too. Now – 2028.

From one parcel of 65 year old, low-yielding Chardonnay vines on Kimmeridgian and Portlandian soils near St Bris just west of Chablis. Elegant and linear with impressive weight and concentration of poached pear and red apple fruit balanced by a seam of limestone minerality which runs right through the palate.
