Made by Franco D'Anna at Hoddles Creek from a combination of bought in Upper Yarra Valley fruit and some experimental blocks on the estate. Franco leaves about 20% whole bunches in the ferment, as he states “to give spice and fine tannins” - and some complexity - and gives it about 20 days on the skins. All de-stemmed with no crushing. Some batches given 4-5 days cold soak. Some pigéage and pumping over to aid extraction. Then into 30% new, 30% one year old and the rest in older barrels. Good bright colour. Perfumed with cherries and a hint of exotic spice from the oak. Gorgeously fruited, all cherries and brambly fruit. Pure and elegant, with substance and backing for keeping.
