Black Chalk, Classic, Hampshire, 2021

Black Chalk was launched in 2015 when Jacob Leadley, winemaker at Hattingley Valley, was offered the chance to buy the vineyards that supplied some if the latter's best fruit. He then went full-time at Black Chalk in 2018 and working alongside fellow winemaker Zoë Driver. An evangelist for the old chalk soils of Hampshire, Jacob has quickly built Black Chalk into one of England's most respected sparkling wine producers.

50% Chardonnay, 38% Pinot Noir, 12% Pinot Meunier with just under two years on lees. Softly aromatic with attractive citrus and pastry aromas. Fruit-driven palate with crisp, green apple fruit and chalky minerality. Very precise and focused. This goes superbly with sashimi and other Japanese in food - so well, in fact, that Black Chalk is the no.1 English wine in Japan.

"100% estate-grown grapes from the Test Valley in Hampshire. 50% Chardonnay, 38% Pinot Noir, 12% Pinot Meunier. TA 8.5 g/l, RS 5.4 g/l. A small proportion of malolactic fermentation on the base wines and some barrel ageing. 22 months sur lattes and post disgorgement is held for six months on cork before being released. A beautifully orchestrated wine: canon of curd and candied lemon; ostinato of citrus-oil and citrus-blossom fragrance; call of cardamom; response of warm scone, shortbread. Curves-and-zest heart of gloriously toothsome pomelo curd. Winemakers Jacob Leadley and Zoë Driver seem to go from strength to strength.
